 Taco Sauce "verde"





Ingredients:

1 Anaheim Pepper
1 Jalepeno Pepper
3 Tomatillos
1 Tbsp Diced Onion
2 TBSP Diced Green Chilies "from can"
2 Garlic Cloves
pinch of salt
pinch of pepper


Directions:

Place Tomatillos, Anaheim and Jalepeno peppers into a sauce pan and cover with water. Boil for 5 minutes or until peppers feel softer. Allow to cool, and then remove the stems, and seeds. "The sauce will be plenty hot without the seeds".  Combine all ingredients into a food processor and process for 1-2 minutes until smooth.  Store in an airtight container in the fridge.

Cajun Stuffed Chicken




*You will need some cooking twine!

Ingredients
2 Large Boneless Skinless Chicken Breast
1/4 Cup chopped into small pieces Mozzarella
1/4 Cup Shredded parmesan Cheese
1/4 Cup Sundried Tomatoes Chopped up small
1/4 Cup Chicken Broth

Marinade Ingredients:
2 TBSP Olive Oil
1 TBSP Blackening Season
1 tsp Cajun Seasoning
1/2 tsp Dried parsley

Directions:

Filet Chicken Breast's into 4 pieces, and then place in a ziploc bag. Cover with Marinade, seal bag and make sure marinade is evenly covering all pieces of chicken.  Place in fridge to marinate for at least 1 hour. In a small bowl combine Cheese's and tomatoes. Lay chicken breasts out onto a clean surface. Divide filling into 4 equal parts and top chicken with it. Begin at one end and roll the chicken breast up, wrap with twine and tie. Repeat for the other breasts. Preheat oven to 350.  Heat a frying pan over medium heat with 1 TBSP of olive oil.  When hot place rolled chicken in the pan, sear each side for about 30 seconds "no longer".  Place into an oven safe dish add 1/4 cup Chicken broth, cover and place in the oven. Cook for about 30 minutes, or when the meat thermometer reads at least 170 degrees.

Mexican Lasagna -








Ingredients:
 
1 1/2lbs Ground Beef (Organic 93/7)
1/2 Onion Diced
2 Garlic Cloves minced
1 14oz Can Black Beans Rinsed
1 16oz Can Refried Beans
1 Small Can (10 oz) of Enchilada Sauce
3 TBSP Canned Chopped Green Chiles
1 Cup of your Favorite Salsa
1 Packet Taco Seasoing OR Homemade - Recipe below

4 Cups Shredded Cheese
8 Flour Tortillas store bought or Homemade
1 Cup Crushed Tortilla Chips

Additional Optional Toppings - Sour Cream, Guacamole, Cilantro, Salsa, Fresh Diced Onions, Sliced Olives..

Directions:

In a deep frying pan cook ground beef and diced onions, until ground beef is no longer pink. If you used a fattier ground beef, drain any fat in the pan. Then add garlic and taco seasoning mix together well.  Now, lower, and add remainder of ingredients, stir together and allow to simmer for 30 minutes, stiring occasionaly.
 
Grease the bottom of a baking casserole 10 x 13 with a small amount of olive oil. Place one layer of ground beef mixute, and a lite layer of cheese on the bottom. Then, cut two flour tortillas in half and lay the straight side along each edge, then lay two tortillas on top, to cover the entire area. Now, place another layer of ground beef mixture, and top with Cheese, add another layer of tortillas. Now, top with cheese, ground beef mixture, and more cheese. Cover with aluminum foil and bake at 350 for 25 minutes. Un-cover and top with crushed chips and cook for an additional 5 minutes.

Allow to cool for 5-10 minutes before cutting and serving.

Taco Seasoning -

1 TBSP Chili Powder
1/8 th tsp Fresh Ground Black Pepper
1/4 tsp Onion Powder
1 tsp Paparika
1/2 tsp Ground Cumin
1/8th tsp Dried Cilantro
1/4th tsp Ground Cayenne Pepper
1/8th tsp Crushed Red Pepper Flakes

Mix together, and store in an air tight container. I use this amount to replace 1 packet of store bought Taco Seasoning.

*Store bought Taco Seasonings are full of sodium.

Bacon, Mushroom, and French Fried Onion Burger -







Directions & Ingredients:

I like to prepare my mushrooms, onions, and bacon before I cook my burgers. I also slice my cheese, lettuce, and make the sauce prior to cooking the burgers as well, because burgers cook fast and are best served right off the grill.

Other Ingredients you will need:

4-6 Buns
6 Slices of your Favorite Cheese (cheddar or Swiss work great for this burger)
8 -10 1/2 Slices of Pre-Cooked Bacon
Shredded Lettuce


Burger:

1lb Organic Ground Beef 93/7
2 TBSP Bread Crumbs
1 tsp Worcheshire Sauce
1 tsp Soy Sauce
Pinch of Black Pepper
Pinch of Garlic Salt

Mix all ingredients together in a bowl, then let sit until you are done preparing the rest of your food. Then press into burgers. I make 4-6 equal sized balls depending on the size of burgers I want. And, then I use a burger press to make them, you could use the bottom of a cup or bowl.  When ready to cook heat a frying pan over medium heat, when hot place burgers in, allow to cook for about 3 minutes on the first side and 2 on the second side, for well done. Top with a slice of cheese. *Do not press your patties down with your spatula while cooking, allow them to cook halfway though, flip and allow to cook the remainder of the way, this keeps them moist! If you are worried they are not cooked fully through cover with a lid, and cook for an additional minute.

Simple Sauce:

In a small dish mix together;
1 TBSP Mayonnaise, 2 TBSP Ketchup, 1/8th tsp minced garlic, pinch crushed black pepper, 1/2 tsp worcheshire sauce. Place in fridge and allow to sit while you make the rest of your food.


Easy French Fried Onions:

Slice onion straws very thin, pat dry, and then cover in flour. Shake them apart a bit, and drop them into a hot deep fryer or in several inches of hot oil on in a sauce pan. Cook for about 1 minute, or until golden brown. Place onto a paper towel to drain extra oil off.

Sauteed Mushrooms:

Slice 3 Mushrooms thin, and place into 1 TBSP of Olive oil, in a pan over medium heat, sprinkle with a tiny bit of garlic salt, and cook for about 5 minutes, or until soft and brownish.

Burger Prep:

Sprinkle a little garlic salt onto your bun's and then broil them until golden brown. Place 1-2 tsp of Simple Burger Sauce onto bottom bun, then place lettuce, cheeseburger, mushrooms, fried onions, and bacon on top. Enjoy!
