Black Bean & Green Chilies Cheeseburger
Everyone in the house really likes hamburgers, although, I am not a huge fan. So, when I make them I always try and change up the flavors. I thought tonight a southwest inspired one would be tasty, and it came out fantastic! Ingredients:
1 lb Organic Ground Beef (93/7) 1 Cup Southwest Black Beans (smashed up a bit - see recipe below) 1 Tbsp Green Chilies 1/2 tsp Chili Powder 1/2 tsp Paprika 1/4 tsp Cumin 1/4 tsp Granulated Garlic
Directions:
In a bowl mix together all the ingredients, place in fridge and let marinate for about 1 hour. Remove from fridge, form into balls, and make patties. Heat a frying pan over medium heat, and place patties into pan, cook first side for 3-4 minutes and then flip. Place a slice of cheese on the done side, and cover the pan for 2-3 minutes until the burgers are done. We serve them on whole wheat organic buns, but lettuce wraps would be super too! We topped with sliced onions, black bean salsa and romaine lettuce!
Spanish Style Black Beans:
Combine one 15 ounce can of rinsed organic black beans, 1 cup broth or water, 1/2 tsp chili powder, 1/4 tsp paprika 1/2 tsp cumin, 1/8 tsp granulated garlic, and pinch of black pepper. Bring to a soft boil, uncovered for a about 8 minutes, then drain off excess liquid and serve .
Roast Beef Sandwich I saw a recipe from the pioneer woman, that inspired the making of this meal. :)
Ingredients:
1 TBSP Olive Oil 1 Medium Onion 2 lbs stew meat (you could use a chuck roast or another roast that you like, but using stewmeat saves us money.)6 Cups Beef Broth 6 Cups Organic, Low sodium beef broth 2-3 TBSP Italian Seasoning 1/4 tsp black pepper
1 large loaf of french bread (or seperate rolls of choice) Cheese of your choice, I used about 1/2 cup shredded mozzarella.
Directions:
Preheat oven to 250 degrees, and then in a dutch oven, over medium heat place olive oil, and sliced onions. Next, add meat and seasoning to the pot. I did not stir this I wanted the onions to remain on the bottom of the meat. Then, I added 6 cups of beef broth, covered it, and brought it to a boil. Once, it was boiling I placed it in the oven and allowed it to cook all day (approx. 5 hours.) You could do this in a crockpot as well. When the meat is done, you can use a potato masher to gently press on the meat and it will all fall apart, like shredded beef.
Once, you are ready to eat, slice your french bread in half, length wise, and sprinkle with a bit of granulated garlic, place under the broiler until golden brown. Next, drain off the meat and cover one side of the bread, top that with some cheese and return to the oven just until the cheese begins to melt! Slice into single sandwiches, serves 4-6
If you want to use the broth as a dipping sauce, au jus, then you need to place the broth into the fridge for about an hour so that the fat can come to the top and harden, once you remove it, and reheat the broth it is a very tasty dipping sauce!
Mongolian Beef I have been really into Asian food lately, so tonight I tried another new recipe; this time it was for Mongolian beef. It turned out amazing!
Ingredients & Directions:
Marinade: 1/2 tsp Baking Soda 1 TBSP Soy Sauce 1 tsp Sugar 1 TBSP Corn Starch 1 TBSP Water 2 TBSP Olive Oil
1 1/2 lbs Flank Steak sliced in thin strips across the grain
- Whisk the above ingredients together in a bowl large enough to fit the meat into also. Once the marinade is mixed together well, add the meat, and make sure it is all covered. This marinade is a meat tenderizer, and it works very well! Place in fridge and allow to marinate for atleast 1 hour.
Sauce: 2 TBSP Vegetable Oil 1 tsp fresh garlic minced 1/4 tsp Ground Ginger 1/4 cup LOW Sodium Soy Sauce (I really recommend doing this, or the meat could taste really salty) 1/4 cup Soy Sauce 1/2 cup Water 1/2 cup Dark Brown Sugar
Other Ingredients: 1/4 Cup Corn Starch 1 Cup Vegetable Oil 1- 2 Cups Fressh Chopped Vegies (Mushrooms, Green Onions, Onions, Snow Peas, Broccoli, Broccoli Slaw, Carrots, and Water Chestnuts are all really good choices!)
Once the meat has marinated in the fridge remove, and lay out on a cutting board, or other clean surface, then sprinkle each side with the cornstarch. Meanwhile, for the sauce, place 2 TBSP of oil in a smal sauce pan over medium heat, add the minced garlic, and saute for a few seconds. However, be sure to add the soy sauce and water BEFORE the garlic begins to brown! Then, add the ginger and dark brown sugar, and stir until combined, reduce heat to meadium-low and simmer while you finish preparing the meat. Heat in a wok, or other pan, the 1 cup of oil over medium-high heat. Now, add the cornstarch coated beef to the pan (in small batches if necessary) and cook for several minutes, dont over cook it. Then, either safely empty the remaining oil out of your wok, or use a different pan to saute your vegetables in a small amount of oil. Once the vegis begin to soften a bit add about 1/4 of your sauce to the vegetables. After about 1 minute add your meat back to the pan and the reamainder of your sauce, allow to simmer until everything is coated well, and the sauce reduces a bit. I hope you enjoy, we sure did! :)
Spicy Whiskey BBQ Burgers I saw a recipe for BBQ Whiskey Sliders and thought, OMGoodness I need to make burgers out of this recipe!
First thing I did was take some lean ground beef, and make pattys, I topped them with a little crushed black pepper and salt. Next, I heated some butter over medium-high heat and fryed the burgers in them.. mmmmm this made them taste quite nice! Don't over cook them, because you will be cooking them a little bit more in a bit, so just get each side cooked, and then place them onto a dish.. Then, dice up some onions and saute them in the butter & grease... this gives you some great flavoring! Once they are nice and soft add your jalepenos, and whiskey. Let that deglaze the pan and then add your bbq sauce. Now, stick your burgers back into the sauce and cook each side for 2-3 minutes.. Ok, guys I am warning you these little burgers are so packed full of yummy flavor you are going to want seconds, so make plenty!!! They are really, really good!
Ingredients: 1 - 1/2 lbs Lean Ground beef Crushed Black Pepper Salt 4 TBSP Butter 1/2 Onion Diced 1/4 Cup Diced Jarred Jalepenos (or more, these weren't too spicy) 1/2 Cup Whiskey 1 Cup BBQ Sauce (I like Jack Daniels, or Sweet Baby Rays) 6-8 Hamburger buns A little more butter to coat the buns!
Extra Toppings: Cheese, Jalepenos, Diced Onions, Onion Rings, Bacon... Oh the endless possibilities of things you could top these with!
I just added some put a spoonful of the cooked bbq sauce with onions, and jalepenos on top of mine, with a slice of cheese, Casey had diced onions, jalepenos and cheese on his!
Instructions: Form your ground beef into 6-8 patties top both sides with crushed black pepper and salt. Heat a fying pan over medium-high heat, add butter and hamburger patties. Cook on each side for 2-3 minutes, don't over cook them, they will be cooked a little more at the end. Next, remove the burgers and place on a dish, now add diced onions and saute until soft. Once they are cooked add the diced jalepenos, and Whiskey. Allow the Whiskey to reduce a bit before you add your BBQ Sauce. Once the pan is deglazed, add your BBQ Sauce, and stir around. Once it is all mixed together well add your cooked patties back to the pan, cook on each side for 1-2 minutes so they are well covered! Meanwhile, turn on your broiler, and broil your buns with a little bit of butter on them. Once everything is ready ENJOY! I know we did! Enjoy!

Beef & Bean Flautas Found a recipe for Beef and Bean Falutas on pintrest and thought they sounded great! I changed up a few things, but overall the recipe is very similar to the one I found. They were really rather easy to make, and everyone enjoyed them, so that is a major plus! First thing I did was dice up some sweet onion, and saute it in some oil, then I added the ground beef, and cooked it until there was no more pink. Then I added all of the seasonings. Super simple, right? But, believe me its so full of yummy flavor.
Ingredients 1 TBSP Olive Oil 1/2 sweet onion diced 1 -1 1/2 lbs Ground Beef ( I use lean, and Organic)
1/2 tsp Onion Powder 1 tsp Coriander 1/2 tsp Cumin 1 tsp Chili Powder 1 tsp Paprika 1 tsp Garlic Powder 1/4 tsp Oregano 3 Cloves of Garlic Minced Small amount of fresh cracked black pepper Pinch of Salt 1/2 Cup Refried Beans
Flour Tortilla Shells 1/2 Cup Shredded Cheddar Cheese 1/2 Cup Shredded Pepper Jack Cheese Cooking Spray or Small amount of Olive Oil
Directions Preheat Oven to 375 degrees
Saute the onions in the olive oil until they begin to soften, then add the ground beef and cook until there is no more pink. Then add all the seasonings ( I pre-mixed all mine in a small dish before adding them, because there is a lot of them!) Once all of those are combine, add the refried beans and mix together until its combine well and everything is hot. Now, sit that aside and microwave your tortilla shells for about 30 seconds or until they are warm and soft. Place a line of meat mixture, and top with cheese onto the tortilla and then roll up like a burrito. Line them up on a non stick cookie sheet, or silpat. Rub both sides of the tortilla with either the olive oil, or cooking spray and then bake for about 8 minutes on the first side, and 6 minutes on the second side. They are sooo yummy, enjoy!!!
Broccoli & Beef I have seen pictures of broccoli and beef recipes around, and its always looked so yummy, so finally I decided to make it! And, it did come out great! Ingredients:
Marinade
1/2 tsp Baking Soda 1 TBSP LOW Sodium Soy Sauce 1 tsp Sugar 1 TBSP Corn Starch 1 TBSP Water 2 TBSP Olive Oil

Sauce
1/2 Cup Low Sodium Soy Sauce 2 TBSP Brown Sugar 2-4 Cloves Garlic Minced small (depending on size) 2 TBSP Corn Starch 1 TBSP Sherry
1-2 Cups Broccoli Florrets
*Be sure and use low sodium, or it will be way to salty!
-In a seperate bowl from the marinade whisk together the above ingredients (not broccoli), allow to sit for atleast 20 mins so the garlic's flavor can come out in the sauce.
Now, in a wok or frying pan heat 1-2 TBSP of oil over medium/high heat. Once, the oil is hot add the broccoli and saute for about 1 minute, then remove from pan. Now, add 1 more TBSP of oil, the marinated meat, and 1/2 of the sauce. Cook for 3-5 minutes until all the meat is totally cooked, then re add the broccoli and the remainder of the sauce. Cook for 1-2 minutes more until the broccoli is semi soft. You can serve over rice, or chow mein noodles.
Then enjoy, we sure did!
Beef StewI saw a recipe for beef stew on the canning wifes website and I thought it looked so yummy! I decided to alter it some and try it myself. It was a lot different then what I usually make, with many vegetables, and tomatoes!
If you look at the bottom of the page you'll see an ingredients list. :) The first step in this unique stew is to chop 1/2lb of bacon up into small pieces and fry them up until they are all the way done. While this is cooking prepare your beef. Take 1lb of stew meat and coat it in flour, salt, pepper, and garlic powder. Place the coated meat into the hot grease, and brown each side. Do this in batches if needed, and then remove it and place with the bacon. Now, add 1 onion that has been chopped up, and saute until soft. Add 2 garlic cloves minced, salt, pepper, 1 bay leaft, 1/2 tsp parsley. Now, add bacon, browned steak, 4-5 chopped potatoes, approx. 1 and 1/2 cups chopped carrots, and 6-8 chopped mushrooms. These are the vegetables we chose to use, you can add any combination your family would enjoy. Next, add 2 and 1/3 cups beef broth (I prefer to use base mixed with water). Cover and bring to a soft boil. Now place in a 325 degree preheated oven and cook for approx. 3 hours. Stirring once every hour. The vegetables should be really soft, and the meat soft and falling apart. Serve with some old rustic bread! Enjoy!! Ingredients:1/2 lb Bacon Chopped 1 Yellow or Sweet Onion Chopped 1lb Stew Meat 4-5 Chopped Potaotes 1 to 1 1/2 Cups Chopped Carrots 6-8 Mushrooms Chopped 1 Bay Leaf 2 and 1/3 Cups Beef Broth 2 Garlic Cloves salt & pepper 1/2 tsp Parsley

Pizza Cheeseburgers
Ingredients:
Patty Ingredients:
1 1/2lbs Organic Lean Ground Beef 3 Tbsp Mozzarella Cheese Diced very small 10 Slices of Pepperoni Diced very small 1/2 tsp Dried Parsley 1 tsp Ketchup 1/4 tsp Garlic Powder pinch of Crushed Red Pepper Flakes pinch of Fresh Ground Black Pepper
Toppings:
1 Slice of Mozzarella Cheese for each patty 1 Slice of Cheddar Cheese for each patty 1 Slice of Pepperoni for each patty 1/4 Cup Diced Pepperoncinis 1/2 Cup Saute'ed Onions
Directions:
In a medium bowl combine all patty ingredients. Form into 6 balls, and then press out into patties. Preheat a frying pan over mdeium heat, and cook first side for about 2 minutes. Flip burger, and place cheese, pepperoni, and pepperoncinis on top of the patty. Cover and allow to cook for 1 more minute. Top with Saute'ed onions, and serve on a toasted hamburger bun.

Corndog
Ingredients - 8 Hot dogs (we use Organic Beef ones) Oil for Deep Fryer or Sauce pan 3/4 cups Corn Meal 1 1/4 Cups All Purpose Flour 1 Tbsp Sugar 2 tsp Baking Powder 1/4 tsp Baking Soda pinch Salt 1 tsp Honey 1 Egg 1 Cup Milk
Directions: In a Electric mixer place all dry ingredients and mix together on low speed. Now in a small bowl add the wet ingredients and mix together, then pour in with the dry ingredients and mix on low/med speed until combine.
Preheat oil in a sauce pan or deep fryer to about 350 degrees. Pat hot dogs dry and insert a wooden skewer in the bottom (I used thicker kabob sticks). Dip into your batter and twirl until the entire hotdog is covered. Continue to twirl the hotdog as you move it over to the oil.(if you dont the batter will begin to drip towards the bottom) As you dip it into the hot oil continue to rotate it so that it cooks evenly and the batter stays even on the hot dog. Just twirl it slowly. "my kids said just like when you are cooking a perfect marshmallow. ;) ha!" Cook for 2-3 minutes or until golden brown..
Pat dry with a paper towel and allow to cool a bit.

Bacon, Mushroom, and French Fried Onion Burger -
Directions & Ingredients:
I like to prepare my mushrooms, onions, and bacon before I cook my burgers. I also slice my cheese, lettuce, and make the sauce prior to cooking the burgers as well, because burgers cook fast and are best served right off the grill.
Other Ingredients you will need:
4-6 Buns 6 Slices of your Favorite Cheese (cheddar or Swiss work great for this burger) 8 -10 1/2 Slices of Pre-Cooked Bacon Shredded Lettuce
Burger:
1lb Organic Ground Beef 93/7 2 TBSP Bread Crumbs 1 tsp Worcheshire Sauce 1 tsp Soy Sauce Pinch of Black Pepper Pinch of Garlic Salt
Mix all ingredients together in a bowl, then let sit until you are done preparing the rest of your food. Then press into burgers. I make 4-6 equal sized balls depending on the size of burgers I want. And, then I use a burger press to make them, you could use the bottom of a cup or bowl. When ready to cook heat a frying pan over medium heat, when hot place burgers in, allow to cook for about 3 minutes on the first side and 2 on the second side, for well done. Top with a slice of cheese. *Do not press your patties down with your spatula while cooking, allow them to cook halfway though, flip and allow to cook the remainder of the way, this keeps them moist! If you are worried they are not cooked fully through cover with a lid, and cook for an additional minute.
Simple Sauce:
In a small dish mix together; 1 TBSP Mayonnaise, 2 TBSP Ketchup, 1/8th tsp minced garlic, pinch crushed black pepper, 1/2 tsp worcheshire sauce. Place in fridge and allow to sit while you make the rest of your food.
Easy French Fried Onions:
Slice onion straws very thin, pat dry, and then cover in flour. Shake them apart a bit, and drop them into a hot deep fryer or in several inches of hot oil on in a sauce pan. Cook for about 1 minute, or until golden brown. Place onto a paper towel to drain extra oil off.
Sauteed Mushrooms:
Slice 3 Mushrooms thin, and place into 1 TBSP of Olive oil, in a pan over medium heat, sprinkle with a tiny bit of garlic salt, and cook for about 5 minutes, or until soft and brownish.
Burger Prep:
Sprinkle a little garlic salt onto your bun's and then broil them until golden brown. Place 1-2 tsp of Simple Burger Sauce onto bottom bun, then place lettuce, cheeseburger, mushrooms, fried onions, and bacon on top. Enjoy!
