Black Bean & Green Chilies Cheeseburger


Everyone in the house really likes hamburgers, although, I am not a huge fan.  So, when I make them I always try and change up the flavors. I thought tonight a southwest inspired one would be tasty, and it came out fantastic! 

Ingredients:

1 lb Organic Ground Beef (93/7)
1 Cup Southwest Black Beans (smashed up a bit - see  recipe below)
1 Tbsp Green Chilies
1/2 tsp  Chili Powder
1/2 tsp Paprika
1/4 tsp Cumin
1/4 tsp Granulated Garlic

Directions:

In a bowl mix together all the ingredients, place in fridge and let marinate for about 1 hour. Remove from fridge, form into balls, and make patties.  Heat a frying pan over medium heat, and place patties into pan, cook first side for 3-4 minutes and then flip. Place a slice of cheese on the done side, and cover the pan for 2-3 minutes until the burgers are done. We serve them on whole wheat organic buns, but lettuce wraps would be super too!  We topped with sliced onions, black bean salsa and romaine lettuce! 


Spanish Style Black Beans:

Combine one 15 ounce can of rinsed organic black beans, 1 cup broth or water, 1/2 tsp chili powder, 1/4 tsp paprika 1/2 tsp cumin, 1/8 tsp granulated garlic, and pinch of black pepper. Bring to a soft boil, uncovered for a about 8 minutes, then drain off excess liquid and serve .

Chili

We LOVE chili, but when I gave up buying canned foods, we haven't had it to often.  Finally, came up with a recipe that everyone in the house enjoys!


Ingredients:

1 TBSP Safflower Oil
1 Yellow Onion Diced
1/2 Red Bell Pepper
3 Garlic Cloves Minced
4-5 Cups Beef Broth (depending on how thick you want your chili)
1 Can (organic low sodium) Diced Tomatoes (or about 6 small tomatoes diced)
2 Cups precooked ground beef (Organic 93/7)
1/2 can organic tomato paste
2 TBSP Chili Powder
1 1/2 tsp Paprika
1 1/2 tsp Cumin
1/2 tsp Garlic Powder
1/8 tsp Cayenne Pepper
1/2 tsp Oregano
1/2 tsp Crushed Black Pepper

Directions:

In a large stock pot, or dutch oven place 1 TBSP of safflower oil over medium heat. Then, add diced onions and red peppers saute until tender.  Next, add tomatoes and cook for about 30 seconds, then add remainder of ingredients EXCEPT the beans (you will add these later). Now, bring to a boil, cover and let simmer for about 1 hour.  Then, add all the drained and rinsed beans to the pot, cover and allow to cook for about 2 more hours.

Serve with cheese, sour cream, fresh diced onions, or any other toppings your family enjoys. :)  

 
 

Spicy Whiskey BBQ Burgers

I saw a recipe for BBQ Whiskey Sliders and thought, OMGoodness I need to make burgers out of this recipe!  

First thing I did was take some lean ground beef, and make pattys, I topped them with a little crushed black pepper and salt.

Next, I heated some butter over medium-high heat and fryed the burgers in them.. mmmmm this made them taste quite nice! Don't over cook them, because you will be cooking them a little bit more in a bit, so just get each side cooked, and then place them onto a dish..

Then, dice up some onions and saute them in the butter & grease... this gives you some great flavoring!

Once they are nice and soft add your jalepenos, and whiskey. Let that deglaze the pan and then add your bbq sauce.  Now, stick your burgers back into the sauce and cook each side for 2-3 minutes..

Ok, guys I am warning you these little burgers are so packed full of yummy flavor you are going to want seconds, so make plenty!!! They are really, really good!

Ingredients:
1 - 1/2 lbs Lean Ground beef
Crushed Black Pepper
Salt
4 TBSP Butter
1/2 Onion Diced
1/4 Cup Diced Jarred Jalepenos (or more, these weren't too spicy)
1/2 Cup Whiskey
1 Cup BBQ Sauce (I like Jack Daniels, or Sweet Baby Rays)
6-8 Hamburger buns
A little more butter to coat the buns!

Extra Toppings:
Cheese, Jalepenos, Diced Onions, Onion Rings, Bacon... Oh the endless possibilities of things you could top these with! 

I just added some put a spoonful of the cooked bbq sauce with onions, and jalepenos on top of mine, with a slice of cheese, Casey had diced onions, jalepenos and cheese on his!



Instructions:
Form your ground beef into 6-8 patties top both sides with crushed black pepper and salt. Heat a fying pan over medium-high heat, add butter and hamburger patties. Cook on each side for 2-3 minutes, don't over cook them, they will be cooked a little more at the end.  Next, remove the burgers and place on a dish, now add diced onions and saute until soft.  Once they are cooked add the diced jalepenos, and Whiskey.  Allow the Whiskey to reduce a bit before you add your BBQ Sauce.  Once the pan is deglazed, add your BBQ Sauce, and stir around.  Once it is all mixed together well add your cooked patties back to the pan, cook on each side for 1-2 minutes so they are well covered! Meanwhile, turn on your broiler, and broil your buns with a little bit of butter on them. Once everything is ready ENJOY!  I know we did!
