Corndog

Ingredients -
8 Hot dogs (we use Organic Beef ones)
Oil for Deep Fryer or Sauce pan
3/4 cups Corn Meal
1 1/4 Cups All Purpose Flour
1 Tbsp Sugar
2 tsp Baking Powder
1/4 tsp Baking Soda
pinch Salt
1 tsp Honey
1 Egg
1 Cup Milk

Directions:
In a Electric mixer place all dry ingredients and mix together on low speed. Now in a small bowl add the wet ingredients and mix together, then pour in with the dry ingredients and mix on low/med speed until combine.

Preheat oil in a sauce pan or deep fryer to about 350 degrees. Pat hot dogs dry and insert a wooden skewer in the bottom (I used thicker kabob sticks). Dip into your batter and twirl until the entire hotdog is covered. Continue to twirl the hotdog as you move it over to the oil.(if you dont the batter will begin to drip towards the bottom) As you dip it into the hot oil continue to rotate it so that it cooks evenly and the batter stays even on the hot dog. Just twirl it slowly.
"my kids said just like when you are cooking a perfect marshmallow. ;)  ha!"  Cook for 2-3 minutes or until golden brown.. 

Pat dry with a paper towel and allow to cool a bit.

Chili Nachos

Ingredients:

1 Bag Tortilla Chips
2-3 Cups Shredded Cheddar Cheese
1 Can Cooked Nalleys Chili
1/4 of Green Pepper Sliced thing and Saute'ed
1/4 Onion Sliced Thin and Saute'ed

** Extras - Diced Onions, Salsa, Queso, Sour Cream

Directions:

Place chips on a microwave safe plate, top with shredded cheese.  Microwave for about 30 seconds. Top with cooked chili, more cheese, and any other toppings you would like!


 
 

Chili Burger

Burger Meat:
1lb Lean Ground Beef "I use nothing fattier then 93/7"
1/4 Cup Bread Crumbs "I use Garlic Bread Crumbs"
1 tsp of Best Burger, "Or a combination of your favorite seasonings"
1/2 tsp Mesquite Liquid Smoke
1/8 tsp Fresh Cracked Black Pepper

Directions: Mix together Bread Crumbs, Seasonings, and Liquid Smoke, then add Ground Beef.  Use your hands to mix it all together well.  For small burgers form appox. 2" balls.  This will make approx. 6 burgers. For larger burgers make 3" balls.  I use a cheap plastic hamburger press to form them into even patties you could use a bowl, your hand, a rolling pin. Whatever you choose.  Warm a frying pan over medium heat, once the pan is hot, put in the burgers, allow to cook half way through without touching them; approx. 1-2 minutes. Flip the burgers over and place a slice of cheese on top "optional".  Allow to cook another 1-2 minutes, depending on thickness and how rare you like them. I dont like them rare, so I do about 2 minutes on each side in a hot pan. Remove and top as you like. 

Chili:  Use either canned or homemade, place 2-3 TBSP of chili onto your burger, add saute'ed onions, diced onions, jalepenos, shredded cheese on top of the chili, and place the top bun on top. Depending how much chili you put on, you can either pick up and eat, or use a fork to cut it.

 
 
Chili Dog Bar (Semi-Homemade) -

Ingredients:
"Makes 4-6"
2 cans of Nalley's Chili
1/4 Diced Onion "in chili"
2 TBSP Diced Tomatoes
4-6 Hot Dog Buns
4-6 Hot Dogs
Optional Topping Ideas:
1 Cup Shredded Cheese
3-4 Pre-cooked Bacon Strips Crumbled
1/4 - 1/2 onion diced
                                                         Sour Cream
                                                                      Nacho Cheese
                                                                      Jalepenos
                                                                      Pepperchinis

Directions:  In a sauce pan over medium heat, add 1 tsp of olive oil and diced onions; when soft add chili, and tomatoes. Bring to a boil, and then cover and reduce heat to simmer/low.  Simmer for about 30 minutes.  Meanwhile, prepare your chili dog bar.  Use little serving cups and fill with toppings. Put chili into a large serving bowl, place hot dogs in a dish, and lay everything out so that your friends, and family can create their own chili dog!

Easy, Semi Homemade Chili Burritos -

What you will need:
1 Can of Chili "We use Nalleys"
4 Flour Tortilla Shells
About 1 cup shredded Cheese


Directions: In a soup pan place the chili, and cook over medium/high heat until boils and then remove from heat.  Shred about 1 cup of medium cheddar cheese. Heat up a frying pan over medium heat.  Warm 4 tortillas in the microwave for about 30 seconds, this helps them fold without breaking. Lay a tortilla out on a plate, or cutting board, and in the center of one side of the tortila place a small handful of cheese, and 2 scoops of chili. Fold up the bottom of the tortilla, and then fold over one side and roll it up. Lay in your warm frying pan, let cook about 2-3 minutes on each side until browned. Serve as is or with some sour cream, or nacho cheese.
