
Easy Cheesy Chili Chicken
Ingredients:
2 Chicken Breasts
Marinade Ingredients:
2 TBSP Olive Oil
1 TBSP Chili Powder
1/2 Tsp Cumin Powder
1/4 tsp Garlic Powder
2 TBSP Chopped Fresh Cilantro
dash of Cayenne Pepper
1/8 tsp Paparika
Other Ingredients:
1/2 Red Pepper Sliced into thin pieces
1/2 Green or Orange Pepper sliced into thing pieces
1/2 onion sliced into thin pieces
1 TBSP Olive Oil
1 Cup Shredded Colby Jack Cheese
Directions:
Filet chicken breasts in 1/2 making 4 thinner pieces. In a bowl or plastic ziploc bag place chicken and all the marinade ingredients. Make sure that all the chicken is fully covered with the marinade. Allow to marinate for at least 2 hours. Preheat oven to 350 degrees. Cover a baking sheet with wax paper or aluminum foil. Spread peppers and onions onto the baking sheet and top with olive oil, toss to coat. Lay the chicken breasts over the peppers and onions, and bake for 20 mins or until the thickest breast reads an internal temperature of 160 degrees. When fully cooked place the chicken onto a serving plate, and top with peppers onions and cheese.
